A wonderful volume for those interested in culinary history, this reprint of a period receipt book contains a sampling of nineteenth century beliefs regarding chocolates health and medicinal properties as well as many recipes that will appeal to the modern cook. Applewood Books divides the book into two sections: the first contains the overview of chocolate making and its supposed nutritive value, while the second contains the actual recipes. The book could benefit from an introduction from a modern historian, explaining the importance and biographies of the various sources for the first section of the book and discussing how some of these medical facts came about, but the original nineteenth century authors left enough in their citations that interested readers can do the necessary research themselves.
